Legimat is one of the types of delicious and traditional Iranian sweets that has many similarities to okra sweets. The originality of this delicious sweet belongs to Bushehr province.



Ingredients for 8 people

2 cups white flour
1 egg
Date juice 1 cup
1 liter of liquid oil
Dough for 1 teaspoon
Starch 2 tbsp
2 cups of water

Recipe for baking legumes

first stage
First, sift the white flour into a large bowl and add the sourdough to it, and gradually add the hot water to the ingredients and mix the ingredients with a spoon until the dough is ready, and then place the dough on the bowl with the dough. We cover the cellophane.

second stage
Then we put a napkin on it and put the dough next to the heater or any other warm place to rest for 2 hours and then it comes out. Then we break the egg in a cup and put the starch in it. Add and mix well.

third level
When the sourdough is ready and has come out, add it and mix the dough well so that the dough is soft. Then, in a small pot, preferably with a lot of depth, pour the oil into a float and put it on a low heat until the oil is completely hot over time.

The fourth stage
Pour the dough into the funnel and when the oil is hot, press the funnel so that it comes out of the dough as much as you want and cut it with scissors so that the dough falls into the oil and is fried. Pour the dough into the oil.

The fifth step
Then turn the legumes upside down in the oil so that all parts of them are fried. Pour the date jam in boiling milk and put it on low heat, and when the legumes are fried, remove them from the oil with a spatula. Bring and pour in the date juice.

Step Six
After removing the legumes from the oil, you can put them in a strainer to remove the excess oil (or with a towel) and if you don't like the taste of date juice, then put it in a thickened and cooled saffron syrup. Give.

Step 7
Let the sweets sit in the syrup for 3 minutes, then take them out and put them in a strainer to remove the excess date juice from them and put the legumes in the desired dish and sprinkle them with coconut powder. We decorate.
