Kachi is one of the types of delicious and popular Iranian desserts, which is also considered as an auxiliary and strengthening food.

Ingredients for 4 people

  • 8 tablespoons of rice or wheat flour
  • 6 tablespoons sugar
  • 2 teaspoons oil or butter
  • Rose 1 tbsp
  • Cardamom powder 1 pence
  • Cinnamon half a tablespoon of jam
  • Brew saffron 1 tbsp
  • Turmeric half a tablespoon of jam
  • 4 glasses of water

first stage
First, sift the flour twice, then pour the sifted flour into a suitable pot and fry it on a gentle heat until the raw smell of flour is obtained. Then add the oil or butter with the turmeric to the flour.

second stage
Now we have to lightly fry the flour mixture until it turns golden, you don't need to fry the flour too much to completely change the color. Then mix the water with sugar, cardamom powder and saffron and mix it in another bowl until smooth.

third level
At this stage, add the water and other ingredients to the pot containing the flour and stir constantly until it starts to simmer. Now we have to close the lid of the pot and keep the kachi on a very gentle heat for about 30 minutes to prepare it.

The fourth stage
It is better to stir the kachi every few minutes so that it does not settle. In the last 10 minutes of cooking, add the kachi rose to the pot, after the kachi reaches the desired concentration, remove from the heat and set aside.

The fifth step
Only for the concentration of kachi should you pay attention to the fact that kachi becomes harder when it cools down. Finally, we put the kachi in the desired dish and decorate it with cinnamon, pistachio powder or anything else to our taste.
